Put the snails (previusly cleaned) on cold water on a low flame, til they come out from the shell. Put salt, 2 segment of garlic and boil for about 20 minutes, then strain.
In another pan fry slightly the oil, with the garlic, the parsley and the chilli.
Add the tomato sauce and cooke some minutes then pour some water, put and cooke the fregola. After some minutes pour the snails and stir till the end of the cooking.
Wait from the pan (made of terracotta, if possible).
Fry slightly the garlic in a pan, in the oil.
In another pan boil the snails (previusly cleaned) for about 10 minutes, than strain.
Put the snails in the pan of the oil and the garlic.
Add the parsley and the other spices, cook slowly with out the cap for 15 minutes.
Spread with the greated bread.
