We propose You two recipes of our traditional gastronomy: two ancient simple ways to cooke the snails with ingredients of the mediterranean cookery.




Snails with fregola
(ingredients for 4 persons)

  • n° 100 snails of Gesico
  • 200 gr of sardinian fregola
  • 4 clove of garlic
  • 200 gr of tomato sauce
  • 4 spoons of extra olive oil
  • parsley, chilli and salt at pleasure
  • 3 glasses of water


  • Put the snails (previusly cleaned) on cold water on a low flame, til they come out from the shell. Put salt, 2 segment of garlic and boil for about 20 minutes, then strain.
    In another pan fry slightly the oil, with the garlic, the parsley and the chilli.
    Add the tomato sauce and cooke some minutes then pour some water, put and cooke the fregola. After some minutes pour the snails and stir till the end of the cooking.
    Wait from the pan (made of terracotta, if possible).



    Greened Snails
    (ingredients for 4 persons)

  • 600 gr of snails of Gesico
  • 50 gr of grated bread
  • 2 clove of garlic
  • 3 spoons of extra vergine olive oil
  • an handful of minced parsley
  • chilli and salt at pleasure


  • Fry slightly the garlic in a pan, in the oil.
    In another pan boil the snails (previusly cleaned) for about 10 minutes, than strain.
    Put the snails in the pan of the oil and the garlic.
    Add the parsley and the other spices, cook slowly with out the cap for 15 minutes.
    Spread with the greated bread.
